About us
Caldero De Plantas is a locally owned Tamal pop-up. After a year long hiatus, we have moved back to Chico and are offering our tamales to the community once again. We are a queer, nonbinary operated kitchen, and we strive to make our offerings accessible to all so that everyone can experience the magic of made from scratch food.
Our Mission
Our mission is to solve a very real issue in our community: Increasing people's access to delicious, healing, vegan food--nay, Delicious, Healing, Authentic, Mexican, Vegan, Nourishing Mana. What's more, we want to do it while minimizing waste. That's why we take great care to seek out products that don't require plastic packaging to begin with when we work with them, recycling and composting whenever possible, and when it comes to delivering our products to you, eliminating petroleum based plastics altogether. That's why all of your food is delivered in a paper bag, your tamales are wrapped in biodegradable packaging, your arroz, frijoles, salsa, calabasa, and beverages are all delivered in biodegradable containers. When we started, we were using Beyond Meat as part of our ingredients. We are happy to say that all of our protein is now made in house, using a 1600 year old Mahayana Buddhist Monk method of extracting protein from organic, whole wheat, resulting in clean, delicious protein that's good for you and good for the planet. Now, all of our fruits, vegetables, and grains come to us plastic free, and our Chipotle Peppers are made in house.
When it comes to sourcing our ingredients, we use authentic whole spices that we hand grind in a molcajete, our chiles, cebollas, ajo, y champiñones (Peppers, Onions, Garlic and Mushrooms) are diced then roasted or sauteed in small batches before making their way into your dishes. No corners are cut in the mission to deliver to you the cleanest, most delicious Mexican food. We believe in using organic whenever possible, which is why we always source organic first when available for any ingredient, with an average of 95% of our ingredients being organic, always.
Our Masa Preparada
What makes our Masa so special and sets it apart from other tamales? We make it the old world way, authentically. Starting with Organic whole dried yellow or blue corn, we wash, soak, and cook our corn in a high pH environment in a traditional process called Nixtamalization, which my indigenous ancestors used to increase the digestibility of corn and the bioavailability of the nutrients in the corn. While most tamale makers these days rely on pre-nixtamalized, powdered masa for their masa preparada, this step is done on the same day your tamales are made, resulting in more nutritious, more delicious tamales that are easy on the tummy while also delivering the freshest, most flavorful masa preparada for your tamales.
